It Starts in the Soil with Vineyard Grapes

The old saying in our industry is that “great wine is made in the vineyard.” It all begins with the vineyard grapes. Throughout the growing season, we tend to our land with meticulous care, monitoring the sun, soil, and water. When the sugar levels and acidity reach the perfect balance, the harvest begins. This is the foundation of everything; you simply cannot have a world-class wine without world-class fruit.

Crushing and Pressing: Winemaking Explained

Once the grapes are harvested, the next step in winemaking explained involves breaking the skins. In the past, this was done by foot-treading, but today we use specialized machinery to gently crush the fruit. For white wines, we quickly separate the juice from the skins and seeds to keep the color clear and the flavors crisp. For red wines, the juice stays in contact with the skins, which is where that beautiful ruby color and complex tannins come from.

The Alchemy of Fermentation

This is where the magic happens. Fermentation is the biological process where natural or added yeast consumes the sugars in the grape juice and converts them into alcohol and carbon dioxide. This can take anywhere from a few days to several weeks. During this stage of the wine production process, we keep a very close eye on the temperature to ensure the delicate aromatics of the wine are preserved. It’s a period of transformation where the raw juice finally begins to take on the characteristics of the wine you know and love.

Aging, Bottling, and Finishing Touches

After fermentation, the wine needs time to settle and mature. Some wines are aged in stainless steel to keep them bright and zippy, while others spend time in oak barrels to develop creamy, spicy, or toasted notes. Once the winemaker decides the profile is perfect, we move to bottling. This final stage ensures the wine is sealed and protected so it can continue to evolve in the bottle until you are ready to cork it.
